Ingredients:
- 8 oz (225g) soft goat cheese, room temperature
- 1/4 cup (60g) plain Greek yogurt
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (2g) lemon zest
- 1/4 tsp (1.5g) sea salt
- 2 tbsp (42g) raw honey
- 1/4 cup (30g) toasted walnuts
- 1/2 cup (75g) fresh pomegranate seeds
- 1 sprig (2g) fresh thyme
- 1 baguette, sliced and toasted
Instructions:
- Place the room-temperature goat cheese in a food processor and pulse until the cheese begins to break down.
- Add the Greek yogurt, lemon juice, lemon zest, and sea salt to the processor.
- Process on high for 2–3 minutes until the mixture transforms from a thick paste into a light, fluffy cream that holds soft peaks.
- Spoon the whipped mixture onto the center of a wooden serving board or platter, using the back of a spoon to create a deep spiral well.
- Slowly drizzle the raw honey into the center of the spiral.
- Press the toasted walnuts and fresh pomegranate seeds into the cheese, focusing on the edges of the honey swirl.
- Garnish with fresh thyme leaves and arrange toasted baguette slices around the perimeter.
