Ingredients:

  • 8 oz (225g) soft goat cheese, room temperature
  • 1/4 cup (60g) plain Greek yogurt
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (2g) lemon zest
  • 1/4 tsp (1.5g) sea salt
  • 2 tbsp (42g) raw honey
  • 1/4 cup (30g) toasted walnuts
  • 1/2 cup (75g) fresh pomegranate seeds
  • 1 sprig (2g) fresh thyme
  • 1 baguette, sliced and toasted

Instructions:

  1. Place the room-temperature goat cheese in a food processor and pulse until the cheese begins to break down.
  2. Add the Greek yogurt, lemon juice, lemon zest, and sea salt to the processor.
  3. Process on high for 2–3 minutes until the mixture transforms from a thick paste into a light, fluffy cream that holds soft peaks.
  4. Spoon the whipped mixture onto the center of a wooden serving board or platter, using the back of a spoon to create a deep spiral well.
  5. Slowly drizzle the raw honey into the center of the spiral.
  6. Press the toasted walnuts and fresh pomegranate seeds into the cheese, focusing on the edges of the honey swirl.
  7. Garnish with fresh thyme leaves and arrange toasted baguette slices around the perimeter.
