Ingredients:
- 1 ½ cups (190g) all-purpose flour
- ¾ cup (150g) granulated sugar
- 1 ½ tsp (7g) baking powder
- ¼ tsp (1.5g) salt
- ½ tsp (1g) ground cinnamon
- ½ cup (115g) unsalted butter, melted and cooled
- 1 large (50g) egg, room temperature
- ½ cup (120ml) low-fat buttermilk
- 1 tsp (5ml) pure vanilla extract
- 2 cups (300g) fresh peaches, peeled and sliced
- 1 tbsp (8g) all-purpose flour
- 1 tbsp (12g) honey
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x9 inch square baking pan and line the bottom with parchment paper.
- In a large mixing bowl, whisk together the 190g flour, 150g sugar, baking powder, salt, and cinnamon until no clumps remain.
- Create a well in the center of the dry ingredients. Pour in the melted butter, egg, buttermilk, and vanilla extract.
- Stir with a spatula until just combined; stop as soon as flour streaks disappear to avoid overworking the gluten.
- In a small bowl, toss the sliced peaches with 1 tbsp of flour until lightly coated.
- Spread the batter evenly into the prepared pan. Arrange the peach slices on top in a decorative pattern, pressing them slightly into the batter.
- Bake for 35-40 minutes until edges are golden-brown and the center springs back when touched.
- Optional: Brush the top with honey immediately after removing from the oven for a glossy finish.
