Ingredients:

  • 2 cups heavy whipping cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup unsweetened cocoa powder

Instructions:

  1. In a large mixing bowl or blender, combine the chilled whole milk, sugar, salt, and sifted cocoa powder. Blend on medium speed for 30 seconds or whisk vigorously until the sugar has dissolved and the mixture is a smooth, dark syrup.
  2. Slowly stream in the heavy cream and vanilla extract, mixing just until combined, ensuring not to over-whip the cream.
  3. Pour the mixture into a pre-frozen ice cream maker bowl and churn according to the manufacturer's directions, typically 20–30 minutes, until it reaches a soft-serve consistency.
  4. Transfer the churned ice cream into an airtight container and press a piece of parchment paper or plastic wrap directly onto the surface to prevent ice crystals.
  5. Freeze for at least 4 hours or until firm.
