Ingredients:
- 8 oz cream cheese, softened
- 2 oz goat cheese, softened
- 2 tbsp heavy cream
- 1 tbsp fresh parsley, finely chopped
- 1 tbsp fresh chives, finely chopped
- 1 clove garlic, minced into a paste
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 6 oz Aged Sharp Cheddar, cubed
- 6 oz Brie, sliced into wedges
- 4 oz Manchego, shaved
- 4 oz Prosciutto, folded into ribbons
- 1 cup seeded crackers
- 1/2 cup Marcona almonds
- 1/2 cup dried apricots
- 2 tbsp honey
- 1/4 cup jam
Instructions:
- In a small mixing bowl, combine the softened cream cheese, goat cheese, and heavy cream. Note: Make sure they are truly soft or you'll have lumps.
- Use a rubber spatula to fold in the minced garlic, parsley, and chives until the mixture is a uniform, pale green hue. Season with salt and pepper.
- Roll the herbed cheese mixture into a ball or press it into a small bowl, smoothing the top. Note: This creates the focal point of the board.
- Place the herbed cheese in the center of the board. Arrange the Cheddar, Brie, and Manchego in triangles around the centerpiece, leaving space between them. Do this until the cheese is evenly distributed.
- Position small ramekins of honey and jam in the gaps to create a balanced visual flow.
- Nestle the folded prosciutto next to the hard cheeses. Note: Folding them into ribbons adds height and makes them easier to grab.
- Scatter the seeded crackers in sweeping curves across the board. Continue until they frame the cheese.
- Fill every remaining empty space with Marcona almonds and dried apricots until the board looks lush and overflowing.
