Ingredients:

  • 1.5 lbs ground beef (80/20 lean)
  • 1 small yellow onion, finely diced (approx. 150g)
  • 2 cloves garlic, minced
  • 1 packet (28g) taco seasoning
  • 1/4 cup water
  • 10.5 oz condensed cream of chicken soup
  • 1 cup sour cream
  • 10 oz diced tomatoes and green chilies (Ro-Tel), drained
  • 9.25 oz Nacho Cheese Doritos, roughly crushed into large shards
  • 3 cups sharp cheddar cheese, shredded

Instructions:

  1. Preheat your oven to 350°F (175°C). In a large skillet over medium-high heat, brown the ground beef with the diced onions until the beef is thoroughly seared. Add minced garlic and cook for 1 additional minute.
  2. Drain the excess rendered fat from the skillet. Stir in the taco seasoning and water, simmering for 2-3 minutes until the liquid reduces into a thick glaze.
  3. In a large mixing bowl, whisk together the condensed soup, sour cream, and drained diced tomatoes. Fold in the seasoned beef mixture. Reserve all shredded cheese for topping.
  4. Lightly grease a 9x13 inch baking dish. Spread half of the crushed Doritos (ensure they are large shards) across the bottom. Top with the beef mixture, then layer with all of the shredded cheese and the rest of the crushed chips.
  5. Bake for 20 minutes or until the cheese is bubbly and shows browning (Maillard reaction) and the filling is heated through.
