Ingredients:
- 2 cups (250g) all-purpose flour
- 2 tbsp (25g) granulated sugar
- 1 tbsp (12g) baking powder
- ½ tsp (3g) salt
- 2 large egg yolks
- 1 ¾ cups (415ml) whole milk
- ½ cup (115g) unsalted butter, melted and cooled
- 1 tsp (5ml) vanilla extract
- 2 large egg whites
Instructions:
- Whisk the flour, sugar, baking powder, and salt in a large bowl.
- In a separate medium bowl, blend the melted butter, egg yolks, milk, and vanilla until smooth.
- Pour the wet ingredients into the dry and stir until just combined—do not overmix.
- In a clean bowl, beat the egg whites using a hand mixer until stiff peaks form.
- Gently fold the whipped egg whites into the batter using a spatula with a cut and fold motion.
- Pour the batter onto a preheated, lightly greased iron.
- Cook until the steam stops escaping and the waffle is a deep golden brown.
