Ingredients:

  • 2 cups (250g) all-purpose flour
  • 2 tbsp (25g) granulated sugar
  • 1 tbsp (12g) baking powder
  • ½ tsp (3g) salt
  • 2 large egg yolks
  • 1 ¾ cups (415ml) whole milk
  • ½ cup (115g) unsalted butter, melted and cooled
  • 1 tsp (5ml) vanilla extract
  • 2 large egg whites

Instructions:

  1. Whisk the flour, sugar, baking powder, and salt in a large bowl.
  2. In a separate medium bowl, blend the melted butter, egg yolks, milk, and vanilla until smooth.
  3. Pour the wet ingredients into the dry and stir until just combined—do not overmix.
  4. In a clean bowl, beat the egg whites using a hand mixer until stiff peaks form.
  5. Gently fold the whipped egg whites into the batter using a spatula with a cut and fold motion.
  6. Pour the batter onto a preheated, lightly greased iron.
  7. Cook until the steam stops escaping and the waffle is a deep golden brown.
