Ingredients:

  • 12 oz semi-sweet chocolate chips
  • 1 tbsp coconut oil
  • 1/2 tsp vanilla extract
  • 1 lb strawberries, hulled
  • 2 cups pineapple chunks
  • 2 cups banana slices
  • 1 cup blueberries
  • 1 apple, sliced into wedges
  • 1/4 cup crushed pistachios
  • sea salt
  • fresh berries
  • mint leaves

Instructions:

  1. Wash all fruit thoroughly and pat every piece completely dry with a paper towel to ensure the chocolate adheres.
  2. Place semi-sweet chocolate chips and coconut oil in a heatproof glass or ceramic bowl.
  3. Microwave on high for 30 seconds, remove and stir. Repeat in 15-second increments until the chocolate is glossy and smooth.
  4. Stir in the vanilla extract.
  5. Using a toothpick, dip each piece of fruit halfway into the melted chocolate, shaking gently to remove excess.
  6. Place dipped fruit on parchment paper and immediately sprinkle with crushed pistachios or sea salt.
  7. Chill in the refrigerator for 10-15 minutes until the chocolate shell is firm.
  8. Arrange the dipped fruit on a wooden board or slate platter, filling gaps with fresh berries or mint leaves.
