Ingredients:
- 12 oz semi-sweet chocolate chips
- 1 tbsp coconut oil
- 1/2 tsp vanilla extract
- 1 lb strawberries, hulled
- 2 cups pineapple chunks
- 2 cups banana slices
- 1 cup blueberries
- 1 apple, sliced into wedges
- 1/4 cup crushed pistachios
- sea salt
- fresh berries
- mint leaves
Instructions:
- Wash all fruit thoroughly and pat every piece completely dry with a paper towel to ensure the chocolate adheres.
- Place semi-sweet chocolate chips and coconut oil in a heatproof glass or ceramic bowl.
- Microwave on high for 30 seconds, remove and stir. Repeat in 15-second increments until the chocolate is glossy and smooth.
- Stir in the vanilla extract.
- Using a toothpick, dip each piece of fruit halfway into the melted chocolate, shaking gently to remove excess.
- Place dipped fruit on parchment paper and immediately sprinkle with crushed pistachios or sea salt.
- Chill in the refrigerator for 10-15 minutes until the chocolate shell is firm.
- Arrange the dipped fruit on a wooden board or slate platter, filling gaps with fresh berries or mint leaves.
