Ingredients:

  • 3 large ripe peaches, halved and pitted
  • 2 tbsp honey
  • 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 1 tbsp unsalted butter, melted
  • 1 cup plain Greek yogurt
  • 1 tbsp honey
  • 1/4 tsp ground cinnamon
  • 1 pinch sea salt

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Slice the peaches in half, remove the pits, and place them cut-side up in a baking dish.
  3. In a small bowl, whisk together the melted butter, 2 tbsp honey, 1/2 tsp cinnamon, and vanilla extract.
  4. Brush the honey-butter mixture generously over the cut surface of each peach, allowing some to drip into the bottom of the dish.
  5. Bake for 20 minutes until the peaches have softened and the juices in the pan are bubbling and mahogany-colored.
  6. While peaches roast, whisk together the Greek yogurt, 1 tbsp honey, 1/4 tsp cinnamon, and a pinch of salt in a bowl until smooth.
  7. Remove peaches from the oven and let them rest for 2 minutes to allow the syrup to thicken.
  8. Place a generous dollop of the chilled yogurt in the center of each warm peach half.
  9. Spoon any remaining syrup from the pan over the top of the yogurt.
