Ingredients:
- 2 cups cooked chicken breast, shredded or cubed (approx. 300g)
- 1 large ripe Hass avocado, pitted and peeled
- 1/4 cup red onion, finely diced
- 1/2 cup celery, chopped
- 1/4 cup fresh cilantro, roughly chopped
- 1 tbsp fresh lime juice
- 1/2 tsp garlic powder
- 1/4 tsp sea salt
- 1/4 tsp cracked black pepper
- 1/2 tsp smoked paprika (optional)
Instructions:
- In a large mixing bowl, combine the scooped avocado and lime juice. Use a fork to mash until mostly smooth, leaving small chunks for texture.
- Fold in the diced red onion, chopped celery, cilantro, garlic powder, salt, and pepper. Stir into the avocado base until seasonings are evenly distributed.
- Add the shredded or cubed chicken breast to the bowl. Use a spatula to gently fold the chicken into the avocado mixture until thoroughly coated.
