Ingredients:

  • 2 cups cooked chicken breast, shredded or cubed (approx. 300g)
  • 1 large ripe Hass avocado, pitted and peeled
  • 1/4 cup red onion, finely diced
  • 1/2 cup celery, chopped
  • 1/4 cup fresh cilantro, roughly chopped
  • 1 tbsp fresh lime juice
  • 1/2 tsp garlic powder
  • 1/4 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1/2 tsp smoked paprika (optional)

Instructions:

  1. In a large mixing bowl, combine the scooped avocado and lime juice. Use a fork to mash until mostly smooth, leaving small chunks for texture.
  2. Fold in the diced red onion, chopped celery, cilantro, garlic powder, salt, and pepper. Stir into the avocado base until seasonings are evenly distributed.
  3. Add the shredded or cubed chicken breast to the bowl. Use a spatula to gently fold the chicken into the avocado mixture until thoroughly coated.
