Ingredients:

  • 1/2 cup (113g) unsalted butter, softened
  • 1 cup (250g) creamy peanut butter
  • 2 cups (240g) powdered sugar, sifted
  • 1 teaspoon (4.2g) pure vanilla extract
  • 1/4 teaspoon (1.5g) fine sea salt
  • 3.5 tablespoons (52.5ml) heavy whipping cream, cold

Instructions:

  1. Place the softened butter and peanut butter in the bowl of a stand mixer. Using the paddle attachment, beat on medium-high speed for a full 3 minutes until the mixture transitions to a pale, sandy beige and increases in volume.
  2. Turn the mixer to the lowest setting and gradually add the sifted powdered sugar one half-cup at a time. Once incorporated, add the vanilla extract and sea salt.
  3. Switch to the whisk attachment. While mixing on medium-low, drizzle in the cold heavy whipping cream. Once combined, increase speed to high and whip for 1-2 minutes until the icing is light, fluffy, and holds stiff peaks.
