Instructions:
- In a large bowl, toss the sliced peaches with granulated sugar, cornstarch, cinnamon, lemon juice, and salt.
- Let the peach mixture sit for 5-10 minutes until the fruit releases its juices and the cornstarch dissolves into a smooth slurry.
- Pour the fruit mixture into a 9x9 inch baking dish, spreading it evenly to the edges.
- Whisk together flour, sugar, baking powder, and salt in a mixing bowl.
- Add the chilled butter cubes and use a pastry cutter or fork to work the butter into the flour until the mixture resembles coarse crumbs the size of peas.
- Stir in the milk just until the dough comes together; avoid overmixing to maintain a light texture.
- Drop spoonfuls of the dough over the peaches, leaving small gaps to allow steam to escape during baking.
- Sprinkle the top of the dough with cinnamon sugar.
- Bake for 40 minutes or until the topping is golden brown and mahogany-colored.
