  • 1/2 cup unsalted butter, chilled and cubed
  • 3/4 cup whole milk
  • 1 tbsp cinnamon sugar

Instructions:

  1. In a large bowl, toss the sliced peaches with granulated sugar, cornstarch, cinnamon, lemon juice, and salt.
  2. Let the peach mixture sit for 5-10 minutes until the fruit releases its juices and the cornstarch dissolves into a smooth slurry.
  3. Pour the fruit mixture into a 9x9 inch baking dish, spreading it evenly to the edges.
  4. Whisk together flour, sugar, baking powder, and salt in a mixing bowl.
  5. Add the chilled butter cubes and use a pastry cutter or fork to work the butter into the flour until the mixture resembles coarse crumbs the size of peas.
  6. Stir in the milk just until the dough comes together; avoid overmixing to maintain a light texture.
  7. Drop spoonfuls of the dough over the peaches, leaving small gaps to allow steam to escape during baking.
  8. Sprinkle the top of the dough with cinnamon sugar.
  9. Bake for 40 minutes or until the topping is golden brown and mahogany-colored.
