Ingredients:
- 4 cups (580g) Granny Smith apples, julienned or diced
- 3 cups (280g) shredded cabbage or coleslaw mix
- 1/2 cup (50g) celery, finely diced
- 3 tbsp (20g) green onions, thinly sliced
- 1/2 cup (60g) dried cranberries
- 1/2 cup (120ml) mayonnaise
- 3 tbsp (45ml) apple cider vinegar
- 2 tbsp (30ml) honey
- 1 tsp (5g) Dijon mustard
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
Instructions:
- Wash and dice the apples. Immediately toss the apple pieces into a large mixing bowl with the shredded cabbage, celery, and green onions to ensure an even distribution of vegetables.
- In a separate small bowl, combine the mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper. Whisk vigorously until the mixture is smooth and emulsified.
- Pour the dressing over the apple and cabbage mixture. Gently fold the ingredients with a spatula until every slice of apple is glazed.
- Stir in the dried cranberries last to prevent them from bleeding color into the salad.
