Ingredients:

  • 4 cups (580g) Granny Smith apples, julienned or diced
  • 3 cups (280g) shredded cabbage or coleslaw mix
  • 1/2 cup (50g) celery, finely diced
  • 3 tbsp (20g) green onions, thinly sliced
  • 1/2 cup (60g) dried cranberries
  • 1/2 cup (120ml) mayonnaise
  • 3 tbsp (45ml) apple cider vinegar
  • 2 tbsp (30ml) honey
  • 1 tsp (5g) Dijon mustard
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper

Instructions:

  1. Wash and dice the apples. Immediately toss the apple pieces into a large mixing bowl with the shredded cabbage, celery, and green onions to ensure an even distribution of vegetables.
  2. In a separate small bowl, combine the mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper. Whisk vigorously until the mixture is smooth and emulsified.
  3. Pour the dressing over the apple and cabbage mixture. Gently fold the ingredients with a spatula until every slice of apple is glazed.
  4. Stir in the dried cranberries last to prevent them from bleeding color into the salad.
