Ingredients:
- 2 tbsp unsalted butter
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 4 cups fresh peaches, peeled and diced into 1/4-inch cubes
- 1/2 cup apple cider vinegar
- 1/3 cup packed light brown sugar
- 1 tbsp soy sauce
- 1 tsp red pepper flakes
- 1/2 tsp ground cinnamon
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Melt the butter over medium heat in a large heavy-bottomed saucepan. Add the diced onion and sauté for 5–7 minutes until translucent and fragrant.
- Stir in the minced garlic and grated ginger, cooking for 60 seconds until the aroma is pungent but not browned.
- Stir in the brown sugar, apple cider vinegar, soy sauce, red pepper flakes, cinnamon, salt, and pepper. Stir constantly for 2 minutes until the sugar has fully dissolved and the mixture looks like a bubbling, mahogany-colored syrup.
- Fold in the diced peaches. Reduce the heat to low-medium and simmer uncovered, stirring occasionally to prevent sticking, for 20–25 minutes until the peaches soften slightly and the liquid reduces into a thick glaze.
