Ingredients:

  • 2 tbsp unsalted butter
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 4 cups fresh peaches, peeled and diced into 1/4-inch cubes
  • 1/2 cup apple cider vinegar
  • 1/3 cup packed light brown sugar
  • 1 tbsp soy sauce
  • 1 tsp red pepper flakes
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Melt the butter over medium heat in a large heavy-bottomed saucepan. Add the diced onion and sauté for 5–7 minutes until translucent and fragrant.
  2. Stir in the minced garlic and grated ginger, cooking for 60 seconds until the aroma is pungent but not browned.
  3. Stir in the brown sugar, apple cider vinegar, soy sauce, red pepper flakes, cinnamon, salt, and pepper. Stir constantly for 2 minutes until the sugar has fully dissolved and the mixture looks like a bubbling, mahogany-colored syrup.
  4. Fold in the diced peaches. Reduce the heat to low-medium and simmer uncovered, stirring occasionally to prevent sticking, for 20–25 minutes until the peaches soften slightly and the liquid reduces into a thick glaze.
