Ingredients:
- 3 large overripe bananas (approx. 375g)
- 2 large eggs
- 0.5 cup unsweetened applesauce (115g)
- 0.33 cup plain Greek yogurt (80g)
- 2 tsp pure vanilla extract
- 2 cups all-purpose flour (250g)
- 1 tsp baking soda
- 0.5 tsp fine sea salt
- 1.5 tsp ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C) and grease or line a 9x5 inch loaf pan with parchment paper.
- In a large mixing bowl, mash the overripe bananas until they reach a mostly liquid consistency with minimal lumps.
- Whisk the eggs, unsweetened applesauce, Greek yogurt, and vanilla extract into the mashed bananas until fully emulsified.
- Sift the all-purpose flour, baking soda, sea salt, and ground cinnamon directly over the wet banana mixture.
- Using a silicone spatula, gently fold the dry ingredients into the wet until just combined. Do not over-mix to ensure a tender crumb.
- Pour the batter into the prepared loaf pan and bake for 55 minutes, or until a toothpick inserted into the center comes out clean.
- Transfer the pan to a wire rack to cool for 10 minutes before removing the loaf to cool completely.
