Ingredients:
- 24 cherry tomatoes
- 8 oz cream cheese, softened
- 4 oz feta cheese, crumbled
- 1 tbsp fresh lemon juice
- 1/2 tsp garlic powder
- 1 tbsp fresh dill, finely chopped
- 1/4 tsp cracked black pepper
- 4 slices center-cut bacon, fried until crisp
- 1 tbsp fresh chives, finely minced
Instructions:
- Slice a small sliver off the bottom of each tomato so they can stand upright on a plate.
- Use a paring knife to cut a small circle in the top and carefully scoop out the seeds and pulp.
- Gently pat the inside of each tomato with a paper towel until the interior walls are dry to the touch.
- In a medium bowl, beat the softened cream cheese until smooth and airy.
- Fold in the crumbled feta, lemon juice, garlic powder, and black pepper.
- Stir in the chopped dill until evenly distributed.
- Transfer the filling into a piping bag or a Ziploc bag with one corner snipped off.
- Insert the tip into the bottom of the tomato or fill from the top, piping the mixture until it slightly crowns over the top.
- Finely chop the fried bacon into tiny bits.
- Place a small pinch of bacon and a sprinkle of minced chives atop each filled tomato.
