Ingredients:
- 1 lb (450g) butternut squash, peeled and cubed into ½ inch pieces
- 2 tbsp (30ml) extra virgin olive oil
- ½ tsp (3g) kosher salt
- ¼ tsp (1g) black pepper
- 6 cups (140g) fresh baby spinach
- ½ cup (60g) dried cranberries
- ½ cup (65g) pumpkin seeds (pepitas)
- ½ cup (60g) crumbled feta or goat cheese
- ¼ cup (30g) thinly sliced red onion
- ⅓ cup (80ml) extra virgin olive oil
- 2 tbsp (30ml) apple cider vinegar
- 1 tbsp (15ml) pure maple syrup
- 1 tsp (5g) Dijon mustard
- 1 pinch (1g) salt and pepper
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss the cubed butternut squash with olive oil, salt, and pepper directly on the pan, spreading them in a single layer.
- Roast for 25–30 minutes, flipping halfway through, until the edges are mahogany-colored and the centers are tender.
- Allow the roasted squash to cool for 5–10 minutes before adding to the greens to prevent wilting.
- Combine olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper in a mason jar; shake vigorously or whisk until emulsified.
- Place fresh baby spinach in a large mixing bowl and add the cooled roasted squash, dried cranberries, pumpkin seeds, red onion, and crumbled cheese.
- Drizzle the dressing over the top and toss gently with tongs until the leaves are lightly coated.
