Ingredients:

  • 1 lb Lacinato kale, stems removed and finely chopped
  • 1/2 cup pomegranate arils
  • 1/2 cup walnuts, toasted
  • 1/2 cup goat cheese, crumbled
  • 1/3 cup extra virgin olive oil
  • 3 tbsp balsamic vinegar
  • 1 tbsp maple syrup
  • 1 tbsp fresh lemon juice
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Instructions:

  1. Place the chopped kale in a large bowl. Drizzle one tablespoon of the dressing (or a splash of olive oil) over the leaves. Using clean hands, squeeze and massage the kale for 2–3 minutes until the leaves look darker green and feel soft and tender.
  2. In a small jar or bowl, combine the olive oil, balsamic vinegar, maple syrup, lemon juice, salt, and pepper. Whisk vigorously or shake until the mixture is thick and glossy.
  3. Pour the remaining dressing over the massaged kale and toss gently to coat. Fold in the pomegranate arils, toasted walnuts, and crumbled goat cheese until evenly distributed.
