Ingredients:
- 1 lb Lacinato kale, stems removed and finely chopped
- 1/2 cup pomegranate arils
- 1/2 cup walnuts, toasted
- 1/2 cup goat cheese, crumbled
- 1/3 cup extra virgin olive oil
- 3 tbsp balsamic vinegar
- 1 tbsp maple syrup
- 1 tbsp fresh lemon juice
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions:
- Place the chopped kale in a large bowl. Drizzle one tablespoon of the dressing (or a splash of olive oil) over the leaves. Using clean hands, squeeze and massage the kale for 2–3 minutes until the leaves look darker green and feel soft and tender.
- In a small jar or bowl, combine the olive oil, balsamic vinegar, maple syrup, lemon juice, salt, and pepper. Whisk vigorously or shake until the mixture is thick and glossy.
- Pour the remaining dressing over the massaged kale and toss gently to coat. Fold in the pomegranate arils, toasted walnuts, and crumbled goat cheese until evenly distributed.
