Ingredients:
- 2 cups (180g) old-fashioned rolled oats
- 1 tsp (2g) baking powder
- 1 tsp (2g) ground cinnamon
- ¼ tsp (1.5g) salt
- 1 ½ cups (360ml) milk
- ⅓ cup (80ml) pure maple syrup
- 1 large egg
- 1 tsp (5ml) vanilla extract
- 2 cups (300g) diced fresh peaches
- 1 tbsp (14g) melted butter
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish with melted butter.
- In a large mixing bowl, stir together the rolled oats, baking powder, cinnamon, and salt until well combined.
- Whisk in the milk, maple syrup, egg, and vanilla extract. Stir just until the oats are fully submerged; do not overmix.
- Fold half of the diced peaches into the oatmeal mixture.
- Pour the mixture into the prepared baking dish and arrange the remaining peach slices on top in a decorative pattern.
- Bake for 40-45 minutes until the edges are deep golden brown and pulling away from the sides, and the center is set.
