Ingredients:

  • 2 cups (180g) old-fashioned rolled oats
  • 1 tsp (2g) baking powder
  • 1 tsp (2g) ground cinnamon
  • ¼ tsp (1.5g) salt
  • 1 ½ cups (360ml) milk
  • ⅓ cup (80ml) pure maple syrup
  • 1 large egg
  • 1 tsp (5ml) vanilla extract
  • 2 cups (300g) diced fresh peaches
  • 1 tbsp (14g) melted butter

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish with melted butter.
  2. In a large mixing bowl, stir together the rolled oats, baking powder, cinnamon, and salt until well combined.
  3. Whisk in the milk, maple syrup, egg, and vanilla extract. Stir just until the oats are fully submerged; do not overmix.
  4. Fold half of the diced peaches into the oatmeal mixture.
  5. Pour the mixture into the prepared baking dish and arrange the remaining peach slices on top in a decorative pattern.
  6. Bake for 40-45 minutes until the edges are deep golden brown and pulling away from the sides, and the center is set.
