Ingredients:
- 16 oz (450g) Rotini or Fusilli pasta
- 1 tbsp (15g) Salt
- 2 cups (300g) Cherry tomatoes, halved
- 8 oz (225g) Mozzarella pearls
- 1/2 cup (15g) Fresh basil leaves, chiffonade
- 1/2 cup (60g) Red onion, finely diced
- 1/2 cup (70g) Black olives, sliced
- 1/2 cup (120ml) Extra virgin olive oil
- 3 tbsp (45ml) Red wine vinegar
- 1 tsp (5g) Garlic powder
- 1 tsp (5g) Dried oregano
- 1/2 tsp (3g) Salt
- 1/4 tsp (1g) Black pepper
Instructions:
- Bring a large pot of salted water to a rolling boil.
- Add the pasta and cook for 1 minute less than the package directions suggest for 'al dente'.
- Drain in a colander and immediately rinse with cold water until the pasta is cooled to the touch.
- While the pasta boils, halve the cherry tomatoes and finely dice the red onion.
- Slice the olives and thinly slice the fresh basil into ribbons (chiffonade).
- Combine the tomatoes, onion, olives, and mozzarella pearls in a large mixing bowl.
- Place the olive oil, red wine vinegar, garlic powder, oregano, salt, and pepper into a mason jar and shake vigorously for 30 seconds or whisk until emulsified.
- Add the cooled pasta to the mixing bowl with the vegetables.
- Pour the dressing over the mixture and toss gently until every noodle is glistening and ingredients are evenly distributed.
