Ingredients:
- 1.5 cups wheat bran
- 1 cup whole wheat pastry flour
- 0.25 cup ground flaxseed meal
- 1 tsp baking soda
- 1 tsp baking powder
- 0.5 tsp fine sea salt
- 1 tsp ground cinnamon
- 1 cup low-fat buttermilk
- 0.5 cup unsweetened applesauce
- 0.33 cup Greek yogurt
- 0.33 cup molasses
- 1 large egg
- 1 tsp pure vanilla extract
- 0.5 cup raisins
Instructions:
- Preheat your oven to 350°F (180°C) and line your muffin tin with paper liners or grease it thoroughly.
- In a medium bowl, combine the wheat bran and buttermilk. Stir well and let it sit for 15 minutes to hydrate the bran.
- In a large bowl, whisk together the whole wheat flour, flaxseed meal, baking soda, baking powder, salt, and cinnamon.
- To the soaked bran mixture, whisk in the applesauce, Greek yogurt, molasses, egg, and vanilla until smooth.
- Make a well in the center of the dry ingredients and pour in the wet mixture. Fold gently with a spatula until just combined.
- Fold in the raisins. Distribute the batter evenly among the 12 muffin cups.
- Bake at 350°F (180°C) for 20 minutes or until the tops spring back when lightly touched.
