Ingredients:

  • 1.5 cups wheat bran
  • 1 cup whole wheat pastry flour
  • 0.25 cup ground flaxseed meal
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 0.5 tsp fine sea salt
  • 1 tsp ground cinnamon
  • 1 cup low-fat buttermilk
  • 0.5 cup unsweetened applesauce
  • 0.33 cup Greek yogurt
  • 0.33 cup molasses
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 0.5 cup raisins

Instructions:

  1. Preheat your oven to 350°F (180°C) and line your muffin tin with paper liners or grease it thoroughly.
  2. In a medium bowl, combine the wheat bran and buttermilk. Stir well and let it sit for 15 minutes to hydrate the bran.
  3. In a large bowl, whisk together the whole wheat flour, flaxseed meal, baking soda, baking powder, salt, and cinnamon.
  4. To the soaked bran mixture, whisk in the applesauce, Greek yogurt, molasses, egg, and vanilla until smooth.
  5. Make a well in the center of the dry ingredients and pour in the wet mixture. Fold gently with a spatula until just combined.
  6. Fold in the raisins. Distribute the batter evenly among the 12 muffin cups.
  7. Bake at 350°F (180°C) for 20 minutes or until the tops spring back when lightly touched.
