Ingredients:

  • 1/4 cup whole milk (cold)
  • 1 teaspoon unflavored gelatin
  • 1 cup whole milk (ice cold)
  • 1/4 cup powdered sugar (sifted)
  • 1 tablespoon pure vanilla extract

Instructions:

  1. In a small microwave-safe bowl, sprinkle the unflavored gelatin over 1/4 cup of cold milk. Let it sit for 5 minutes to bloom until thick and spongy.
  2. Microwave the bloomed gelatin in 10-second intervals, stirring between each, until the gelatin is completely dissolved and the liquid is clear. Set aside to cool slightly.
  3. In a large, pre-chilled stainless steel mixing bowl, combine the remaining 1 cup of ice-cold milk, sifted powdered sugar, and vanilla extract.
  4. Slowly whisk the dissolved gelatin mixture into the milk base until combined.
  5. Place the bowl in the refrigerator for 20 minutes. Monitor closely; the mixture should be very cold and just beginning to thicken, but not yet set.
  6. Remove from the refrigerator and use a hand mixer or stand mixer with a whisk attachment to beat on high speed until the mixture becomes aerated and forms soft, silky peaks.
