Ingredients:
- 1/4 cup whole milk (cold)
- 1 teaspoon unflavored gelatin
- 1 cup whole milk (ice cold)
- 1/4 cup powdered sugar (sifted)
- 1 tablespoon pure vanilla extract
Instructions:
- In a small microwave-safe bowl, sprinkle the unflavored gelatin over 1/4 cup of cold milk. Let it sit for 5 minutes to bloom until thick and spongy.
- Microwave the bloomed gelatin in 10-second intervals, stirring between each, until the gelatin is completely dissolved and the liquid is clear. Set aside to cool slightly.
- In a large, pre-chilled stainless steel mixing bowl, combine the remaining 1 cup of ice-cold milk, sifted powdered sugar, and vanilla extract.
- Slowly whisk the dissolved gelatin mixture into the milk base until combined.
- Place the bowl in the refrigerator for 20 minutes. Monitor closely; the mixture should be very cold and just beginning to thicken, but not yet set.
- Remove from the refrigerator and use a hand mixer or stand mixer with a whisk attachment to beat on high speed until the mixture becomes aerated and forms soft, silky peaks.
