Ingredients:
- 6 cups (900g) fresh peaches, peeled and sliced
- 1 tbsp (15ml) lemon juice
- 1 tsp (5g) ground cinnamon
- 2 tbsp (30ml) maple syrup
- 1 tsp (5g) vanilla extract
- 1 cup (90g) rolled oats
- 1/2 cup (60g) almond flour
- 1/4 cup (55g) melted coconut oil
- 3 tbsp (45ml) maple syrup
- 1/4 tsp (1.5g) sea salt
- 1/2 tsp (2.5g) ground cinnamon
Instructions:
- Preheat your oven to 375°F (190°C).
- In a medium bowl, toss the sliced peaches with lemon juice, cinnamon, maple syrup, and vanilla. Transfer the mixture to a 9x9 inch baking dish.
- In a large bowl, combine the rolled oats, almond flour, sea salt, and cinnamon.
- Pour in the melted coconut oil and maple syrup. Stir until the mixture forms small, pebbly clumps.
- Spread the crumble evenly over the peaches, leaving a small gap at the edges to allow steam to escape.
- Bake for 30-35 minutes until the fruit is bubbling at the edges and the topping is a deep golden brown.
