Ingredients:

  • 6 cups (900g) fresh peaches, peeled and sliced
  • 1 tbsp (15ml) lemon juice
  • 1 tsp (5g) ground cinnamon
  • 2 tbsp (30ml) maple syrup
  • 1 tsp (5g) vanilla extract
  • 1 cup (90g) rolled oats
  • 1/2 cup (60g) almond flour
  • 1/4 cup (55g) melted coconut oil
  • 3 tbsp (45ml) maple syrup
  • 1/4 tsp (1.5g) sea salt
  • 1/2 tsp (2.5g) ground cinnamon

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, toss the sliced peaches with lemon juice, cinnamon, maple syrup, and vanilla. Transfer the mixture to a 9x9 inch baking dish.
  3. In a large bowl, combine the rolled oats, almond flour, sea salt, and cinnamon.
  4. Pour in the melted coconut oil and maple syrup. Stir until the mixture forms small, pebbly clumps.
  5. Spread the crumble evenly over the peaches, leaving a small gap at the edges to allow steam to escape.
  6. Bake for 30-35 minutes until the fruit is bubbling at the edges and the topping is a deep golden brown.
