Ingredients:

  • 1/2 cup extra virgin olive oil
  • 1/4 cup soy sauce
  • 2 tbsp fresh lemon juice
  • 1 tbsp apple cider vinegar
  • 4 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1/4 tsp cayenne pepper
  • 3 lbs beef tenderloin

Instructions:

  1. In a medium mixing bowl, combine the olive oil, soy sauce, lemon juice, and vinegar. Whisk vigorously for 30 seconds until the mixture is cohesive and no longer separated.
  2. Stir in the minced garlic, Dijon mustard, honey, and smoked paprika. Add the oregano, salt, pepper, and optional cayenne. Whisk until the honey is fully dissolved and the spices are evenly distributed.
  3. Pour the marinade into a gallon-sized freezer bag. Place your tenderloin inside and seal the bag, pressing out as much air as possible. Gently massage the bag to ensure every inch of the meat is coated.
  4. Place the bagged meat in the refrigerator. For a quick flavor boost, 2 hours is sufficient, but for the best results, let it soak overnight.
