Ingredients:

  • 1 lb Sirloin or Ribeye steak
  • 2 tbsp Vegetable oil
  • 3 tbsp Unsalted butter
  • 4 cloves Garlic, smashed
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions:

  1. Pat the steaks completely dry with paper towels and season generously with salt and pepper on all sides.
  2. Heat vegetable oil in a cast iron skillet over medium-high heat until it just begins to smoke.
  3. Place steaks in the pan. Sear whole steaks for 3–5 minutes per side without moving them, or steak bites for 2 minutes per side, until a deep brown crust forms.
  4. Lower heat to medium. Add 3 tbsp of butter and smashed garlic; spoon the foaming garlic-infused butter over the steak continuously for 2 minutes.
  5. Remove steak to a plate and let it rest.
