Ingredients:

  • 3/4 cup unsalted butter, melted and hot
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1/2 tsp fine sea salt
  • 3/4 cup unsweetened cocoa powder, sifted
  • 1/2 cup all-purpose flour
  • 1/2 cup chocolate chips

Instructions:

  1. Preheat your oven to 325 degrees and line an 8x8 inch pan with parchment paper.
  2. Melt the 3/4 cup unsalted butter in a small saucepan until it is hot and bubbling.
  3. Pour the hot butter into a large mixing bowl containing the 1 cup granulated sugar and 1/2 cup light brown sugar.
  4. Whisk the butter and sugars vigorously for 1 minute until the mixture looks like wet sand.
  5. Add the 2 large room temperature eggs and 2 tsp vanilla extract to the sugar mixture.
  6. Whisk by hand for exactly 2 full minutes until the batter turns pale and slightly fluffy.
  7. Stir in the 1/2 tsp fine sea salt and 3/4 cup sifted cocoa powder until no dry streaks remain.
  8. Gently fold in the 1/2 cup all purpose flour using a spatula until just combined.
  9. Fold in the 1/2 cup chocolate chips and pour the batter into the prepared pan.
  10. Bake for 25 minutes until the edges are set and the top has shattered.
