Ingredients:
- 24 oz frozen peach slices, unthawed
- 1/2 cup granulated sugar
- 2 tbsp cornstarch
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tbsp lemon juice
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup whole milk
- 6 tbsp unsalted butter, melted
- 1 tsp vanilla extract
Instructions:
- In a large bowl, toss the frozen peach slices with sugar, cornstarch, cinnamon, nutmeg, and lemon juice.
- Let the mixture sit for 10 minutes to allow the peaches to release syrup and the cornstarch to create a slurry.
- Pour the peach mixture into a 9x9 inch baking dish, spreading them evenly.
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt until no clumps remain.
- Stir in the milk and vanilla extract until just combined.
- Pour the melted butter directly into the bottom of the baking dish and quickly tilt the pan to coat the surface.
- Immediately pour the batter over the butter without stirring.
- Bake in a preheated oven at 350°F (175°C) for 50–60 minutes, or until the topping is mahogany gold and juices are bubbling.
