Ingredients:

  • 24 oz frozen peach slices, unthawed
  • 1/2 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp lemon juice
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup whole milk
  • 6 tbsp unsalted butter, melted
  • 1 tsp vanilla extract

Instructions:

  1. In a large bowl, toss the frozen peach slices with sugar, cornstarch, cinnamon, nutmeg, and lemon juice.
  2. Let the mixture sit for 10 minutes to allow the peaches to release syrup and the cornstarch to create a slurry.
  3. Pour the peach mixture into a 9x9 inch baking dish, spreading them evenly.
  4. In a medium bowl, whisk together the flour, sugar, baking powder, and salt until no clumps remain.
  5. Stir in the milk and vanilla extract until just combined.
  6. Pour the melted butter directly into the bottom of the baking dish and quickly tilt the pan to coat the surface.
  7. Immediately pour the batter over the butter without stirring.
  8. Bake in a preheated oven at 350°F (175°C) for 50–60 minutes, or until the topping is mahogany gold and juices are bubbling.
