Ingredients:
- 6 oz mixed baby greens or arugula
- 1 medium Granny Smith apple, thinly sliced
- 1 medium Bosc pear, thinly sliced
- 4 oz goat cheese, crumbled
- 1/2 cup candied pecans, roughly chopped
- 1/3 cup dried cranberries
- 1 tbsp fresh lemon juice
- 3 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp pure maple syrup
- 1 tsp Dijon mustard
- 1/4 tsp sea salt
- 1/4 tsp black pepper
Instructions:
- Slice the apple and pear into thin, uniform wedges and toss them in a small bowl with the fresh lemon juice to prevent oxidation.
- In a mason jar or small bowl, combine olive oil, balsamic vinegar, maple syrup, Dijon mustard, salt, and pepper. Shake or whisk until the mixture is thick and glossy.
- Place mixed greens in a large bowl, drizzle with half of the dressing, and toss gently to coat.
- Add the lemon-coated apples, pears, and dried cranberries to the greens.
- Fold in the candied pecans and crumbled goat cheese, then drizzle the remaining dressing over the top before serving.
