Ingredients:

  • 6 oz mixed baby greens or arugula
  • 1 medium Granny Smith apple, thinly sliced
  • 1 medium Bosc pear, thinly sliced
  • 4 oz goat cheese, crumbled
  • 1/2 cup candied pecans, roughly chopped
  • 1/3 cup dried cranberries
  • 1 tbsp fresh lemon juice
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp pure maple syrup
  • 1 tsp Dijon mustard
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper

Instructions:

  1. Slice the apple and pear into thin, uniform wedges and toss them in a small bowl with the fresh lemon juice to prevent oxidation.
  2. In a mason jar or small bowl, combine olive oil, balsamic vinegar, maple syrup, Dijon mustard, salt, and pepper. Shake or whisk until the mixture is thick and glossy.
  3. Place mixed greens in a large bowl, drizzle with half of the dressing, and toss gently to coat.
  4. Add the lemon-coated apples, pears, and dried cranberries to the greens.
  5. Fold in the candied pecans and crumbled goat cheese, then drizzle the remaining dressing over the top before serving.
