Ingredients:
- 4 (6 oz / 170g) boneless skinless chicken breasts
- 1/4 cup (60ml) extra virgin olive oil
- 2 tbsp (30ml) fresh lemon juice
- 3 cloves (15g) garlic, minced
- 1 tsp (5g) kosher salt
- 1/2 tsp (2.5g) cracked black pepper
- 1 tsp (5g) smoked paprika
Instructions:
- Whisk together the olive oil, lemon juice, minced garlic, salt, pepper, and smoked paprika in a bowl.
- Place the chicken breasts in a Ziploc bag and pour the marinade over them, ensuring every inch is coated. Let sit for 15-30 minutes.
- Preheat the grill to medium-high heat.
- Place the chicken on the grates and sear without moving for 5-6 minutes per side until mahogany-colored grill marks appear.
- Use a meat thermometer to pull the chicken off the heat exactly when the internal temperature hits 160°F (71°C).
- Transfer the chicken to a plate and cover loosely with foil. Let the meat rest for 5-10 minutes to reach a final internal temperature of 165°F (74°C).
