Ingredients:
- 1.5 lbs fresh peaches, peeled and diced
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
- 1 pinch salt
- 1 can (14 oz) sweetened condensed milk
- 2 cups heavy whipping cream, cold
- 1 tsp pure vanilla extract
Instructions:
- Place diced peaches, sugar, and lemon juice in a saucepan over medium heat. Simmer for 10–15 minutes until the peaches are soft and the liquid has reduced to a thick, glossy syrup.
- Remove the peach mixture from heat, stir in salt, and transfer to a blender. Purée until completely smooth and let cool to room temperature.
- In a large mixing bowl, whisk together the sweetened condensed milk and vanilla extract.
- Slowly stream the cooled peach purée into the condensed milk mixture, whisking constantly until combined.
- In a separate bowl, whip the cold heavy cream until soft peaks form.
- Gently fold the whipped cream into the peach mixture using a spatula until incorporated.
- Pour the mixture into an ice cream maker and churn according to manufacturer's instructions (usually 20–25 minutes) until it reaches a soft-serve consistency.
- Transfer the churned ice cream to a chilled air-tight container and freeze for at least 4 hours to harden.
