Ingredients:

  • 1.5 lbs fresh peaches, peeled and diced
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 pinch salt
  • 1 can (14 oz) sweetened condensed milk
  • 2 cups heavy whipping cream, cold
  • 1 tsp pure vanilla extract

Instructions:

  1. Place diced peaches, sugar, and lemon juice in a saucepan over medium heat. Simmer for 10–15 minutes until the peaches are soft and the liquid has reduced to a thick, glossy syrup.
  2. Remove the peach mixture from heat, stir in salt, and transfer to a blender. Purée until completely smooth and let cool to room temperature.
  3. In a large mixing bowl, whisk together the sweetened condensed milk and vanilla extract.
  4. Slowly stream the cooled peach purée into the condensed milk mixture, whisking constantly until combined.
  5. In a separate bowl, whip the cold heavy cream until soft peaks form.
  6. Gently fold the whipped cream into the peach mixture using a spatula until incorporated.
  7. Pour the mixture into an ice cream maker and churn according to manufacturer's instructions (usually 20–25 minutes) until it reaches a soft-serve consistency.
  8. Transfer the churned ice cream to a chilled air-tight container and freeze for at least 4 hours to harden.
