Ingredients:
- 4 large Portobello mushroom caps (stems removed)
- 2 tbsp (28g) unsalted butter, melted
- 2 cloves (6g) garlic, minced
- 1/2 tsp (1g) kosher salt
- 1/4 tsp (1g) cracked black pepper
- 1 cup (150g) cherry tomatoes, quartered
- 8 oz (225g) fresh mozzarella pearls or cubed mozzarella
- 1/4 cup (10g) fresh basil leaves, chiffonade
- 2 tbsp (30ml) extra virgin olive oil
- Pinch of salt and pepper
- 2 tbsp (30ml) balsamic glaze
Instructions:
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- In a small bowl, whisk together the melted butter, minced garlic, salt, and pepper.
- Using a pastry brush, coat the inside and outside of each Portobello cap with the garlic butter mixture and place them open-side up on the baking sheet.
- In a separate mixing bowl, gently toss the quartered cherry tomatoes, mozzarella pearls, and sliced basil with olive oil and a pinch of salt and pepper.
- Spoon the Caprese mixture generously into each mushroom cap, pressing down slightly to ensure the filling is packed tight.
- Bake for 12–15 minutes until the cheese is bubbly and slightly browned.
- Remove from oven and drizzle with balsamic glaze before serving.
