Ingredients:

  • 4 cups all-purpose flour
  • 1 cup buttermilk powder
  • 1/2 cup superfine granulated sugar
  • 1/4 cup baking powder
  • 2 teaspoons baking soda
  • 1.5 teaspoons fine sea salt
  • 1 large egg (per batch)
  • 2 tablespoons unsalted butter, melted (per batch)
  • 1.25 cups water (per batch)

Instructions:

  1. Combine 4 cups flour, 1 cup buttermilk powder, 1/2 cup superfine sugar, 1/4 cup baking powder, 2 teaspoons baking soda, and 1.5 teaspoons fine sea salt. Whisking for 60 seconds ensures even leavening distribution.
  2. Pass the mixture through a fine mesh sieve into a large storage container. This removes any stubborn lumps from the buttermilk powder.
  3. Take 1.5 cups of the prepared mix and place it in a medium bowl.
  4. Melt 2 tablespoons of unsalted butter and let it cool slightly. Hot butter can scramble the egg.
  5. Beat 1 large egg with 1.25 cups of water and the melted butter.
  6. Pour the liquid into the dry mix and fold together with a spatula. Stop while lumps remain.
  7. Bring your griddle to 180°C and lightly grease with a neutral oil.
  8. Use a 1/4 cup scoop to drop batter onto the hot surface. Wait for bubbles.
  9. Flip when edges look matte and bubbles shatter on the surface.
  10. Heat for another 1-2 minutes until the center springs back when touched.
