Ingredients:

  • 4 (6 oz / 170g) boneless skinless chicken breasts
  • 2 tbsp (30ml) olive oil
  • 1 tsp (5g) salt
  • ½ tsp (3g) black pepper
  • 1 tsp (5g) smoked paprika
  • ½ tsp (3g) garlic powder
  • 1 cup (60g) finely chopped steamed broccoli, patted dry
  • 4 oz (115g) cream cheese, softened to room temperature
  • ½ cup (55g) sharp cheddar cheese, shredded
  • 2 cloves (6g) garlic, minced

Instructions:

  1. Using a sharp knife, slice a horizontal pocket into the thickest part of each chicken breast, being careful not to cut all the way through.
  2. Rub the salt, pepper, paprika, and garlic powder evenly over both the exterior and the inside of the pocket.
  3. In a small bowl, mash the softened cream cheese with a fork until smooth. Fold in the shredded cheddar, minced garlic, and finely chopped broccoli until the mixture is homogenous.
  4. Heat olive oil in an oven-safe skillet over medium-high heat until it shimmers.
  5. Stuff each chicken breast generously with the filling and secure the opening with 2-3 toothpicks.
  6. Place the chicken in the pan and sear for 3-5 minutes per side until a mahogany-colored crust forms.
  7. Transfer the skillet directly into a preheated oven at 375°F (190°C) and bake for 12-15 minutes, or until a meat thermometer inserted into the thickest part reads 165°F (74°C).
  8. Remove from the oven and let the meat rest for 5 minutes before serving.
