Ingredients:
- 4 (6 oz / 170g) boneless skinless chicken breasts
- 2 tbsp (30ml) olive oil
- 1 tsp (5g) salt
- ½ tsp (3g) black pepper
- 1 tsp (5g) smoked paprika
- ½ tsp (3g) garlic powder
- 1 cup (60g) finely chopped steamed broccoli, patted dry
- 4 oz (115g) cream cheese, softened to room temperature
- ½ cup (55g) sharp cheddar cheese, shredded
- 2 cloves (6g) garlic, minced
Instructions:
- Using a sharp knife, slice a horizontal pocket into the thickest part of each chicken breast, being careful not to cut all the way through.
- Rub the salt, pepper, paprika, and garlic powder evenly over both the exterior and the inside of the pocket.
- In a small bowl, mash the softened cream cheese with a fork until smooth. Fold in the shredded cheddar, minced garlic, and finely chopped broccoli until the mixture is homogenous.
- Heat olive oil in an oven-safe skillet over medium-high heat until it shimmers.
- Stuff each chicken breast generously with the filling and secure the opening with 2-3 toothpicks.
- Place the chicken in the pan and sear for 3-5 minutes per side until a mahogany-colored crust forms.
- Transfer the skillet directly into a preheated oven at 375°F (190°C) and bake for 12-15 minutes, or until a meat thermometer inserted into the thickest part reads 165°F (74°C).
- Remove from the oven and let the meat rest for 5 minutes before serving.
