Ingredients:

  • 1 cup (150g) cherry tomatoes, halved
  • 1 tbsp (15ml) extra virgin olive oil
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) cracked black pepper
  • 1 tsp (5ml) balsamic glaze
  • 2 large (110g) organic pasture-raised eggs
  • 1 pinch (0.5g) salt
  • 2 slices (70g) sprouted grain bread
  • 1 clove (3g) fresh garlic, peeled
  • 1 tsp (5ml) olive oil

Instructions:

  1. Toast the sprouted grain bread until the edges are golden-brown and the center is firm.
  2. Immediately rub the raw garlic clove across the surface of the hot toast to infuse the flavor.
  3. Lightly brush the toast with 1 tsp of olive oil to create a moisture barrier.
  4. Heat 1 tbsp of olive oil in a cast iron skillet over medium-high heat until shimmering.
  5. Add halved cherry tomatoes cut-side down and sear undisturbed for 2–3 minutes until skins blister.
  6. Stir in salt, pepper, and balsamic glaze. Once tomatoes release a thick syrup, push them to the edges of the pan.
  7. Crack the eggs into the center of the skillet and cook for 2–3 minutes until whites are set but yolks remain jiggly.
  8. Assemble by placing eggs and blistered tomatoes atop the prepared garlic toast.
