Ingredients:
- 1 cup (150g) cherry tomatoes, halved
- 1 tbsp (15ml) extra virgin olive oil
- 1/2 tsp (3g) sea salt
- 1/4 tsp (1g) cracked black pepper
- 1 tsp (5ml) balsamic glaze
- 2 large (110g) organic pasture-raised eggs
- 1 pinch (0.5g) salt
- 2 slices (70g) sprouted grain bread
- 1 clove (3g) fresh garlic, peeled
- 1 tsp (5ml) olive oil
Instructions:
- Toast the sprouted grain bread until the edges are golden-brown and the center is firm.
- Immediately rub the raw garlic clove across the surface of the hot toast to infuse the flavor.
- Lightly brush the toast with 1 tsp of olive oil to create a moisture barrier.
- Heat 1 tbsp of olive oil in a cast iron skillet over medium-high heat until shimmering.
- Add halved cherry tomatoes cut-side down and sear undisturbed for 2–3 minutes until skins blister.
- Stir in salt, pepper, and balsamic glaze. Once tomatoes release a thick syrup, push them to the edges of the pan.
- Crack the eggs into the center of the skillet and cook for 2–3 minutes until whites are set but yolks remain jiggly.
- Assemble by placing eggs and blistered tomatoes atop the prepared garlic toast.
