Ingredients:

  • 8 large firm strawberries
  • 8 seedless crisp green grapes
  • 200g granulated white sugar
  • 100ml filtered water
  • 1 tbsp corn syrup

Instructions:

  1. Wash the strawberries and grapes thoroughly. Keep the green tops on the strawberries during washing to prevent water from entering the fruit.
  2. Pat every piece of fruit with a paper towel until bone-dry. Let the fruit air-dry at room temperature for 10 minutes to eliminate all surface moisture.
  3. Skewer 1 strawberry and 1 grape onto each bamboo skewer.
  4. In a small, deep saucepan, combine the granulated sugar, filtered water, and corn syrup. Stir gently once only to incorporate ingredients before turning on the heat.
  5. Place the saucepan over medium-high heat. Do not stir the mixture again to avoid crystallization. Boil until the syrup reaches 300°F (150°C) on a candy thermometer.
  6. Working quickly, tilt the pan to pool the syrup and swirl each skewer in the sugar until coated. Immediately plunge the coated fruit into a bowl of ice water for exactly 3 seconds to create a thermal shock.
  7. Place the finished skewers on parchment paper to set completely.
