Ingredients:
- 1 lb brioche bread, cut into 1-inch cubes
- 2 cups mixed berries (blueberries, raspberries, blackberries)
- 6 oz cream cheese, chilled and cubed
- 1 tbsp lemon zest
- 2 cups whole milk
- 1 cup heavy cream
- 6 large eggs
- 1/2 cup pure maple syrup
- 2 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp sea salt
- 1/2 cup all-purpose flour
- 1/2 cup light brown sugar, packed
- 1/2 cup unsalted butter, cold and cubed
Instructions:
- Grease a 9x13 inch baking dish with butter. Layer half of the bread cubes in the dish, followed by half of the berries and half of the cream cheese cubes. Repeat with the remaining bread, berries, and cream cheese.
- In a large mixing bowl, whisk together the eggs, milk, heavy cream, maple syrup, vanilla, cinnamon, and salt until well combined and smooth.
- Pour the custard mixture evenly over the bread layers. Cover the dish tightly with foil and refrigerate for at least 4 hours, or preferably overnight.
- When ready to bake, preheat the oven to 350°F (175°C). In a small bowl, combine flour, brown sugar, and cold butter using a pastry cutter until coarse crumbs form.
- Remove the foil and sprinkle the streusel topping over the soaked bread. Bake for 45–50 minutes until the center is set and the top is golden brown and puffed.
