Ingredients:
- 7 oz (200g) Block Feta Cheese
- 2 cups (500g) Cherry Tomatoes
- 1/3 cup (80ml) Extra Virgin Olive Oil
- 3 cloves (15g) Garlic, minced
- 1 tsp (2g) Dried Oregano
- 1/2 tsp (1g) Red Pepper Flakes
- 1/2 tsp (3g) Black Pepper
Instructions:
- Preheat your oven to 400°F (200°C). Place the block of feta directly in the center of a 9x13 inch baking dish.
- Arrange the cherry tomatoes around the cheese in a single layer. Note: Don't pile them too high or they won't blister evenly.
- Scatter the minced garlic over the tomatoes. Drizzle the olive oil evenly across the entire dish, ensuring the feta is well coated.
- Season the dish with dried oregano, red pepper flakes, and black pepper.
- Bake for 30 minutes until the feta is softened and slightly golden on top and the tomatoes are blistered and bursting.
- Remove from the oven and let cool for 5 minutes. Note: This prevents the oil from splashing when you stir.
- Using a fork, mash the softened feta into the roasted tomatoes and garlic.
- Stir vigorously until a smooth, creamy sauce forms and the cheese fully incorporates.
