Ingredients:

  • 7 oz (200g) Block Feta Cheese
  • 2 cups (500g) Cherry Tomatoes
  • 1/3 cup (80ml) Extra Virgin Olive Oil
  • 3 cloves (15g) Garlic, minced
  • 1 tsp (2g) Dried Oregano
  • 1/2 tsp (1g) Red Pepper Flakes
  • 1/2 tsp (3g) Black Pepper

Instructions:

  1. Preheat your oven to 400°F (200°C). Place the block of feta directly in the center of a 9x13 inch baking dish.
  2. Arrange the cherry tomatoes around the cheese in a single layer. Note: Don't pile them too high or they won't blister evenly.
  3. Scatter the minced garlic over the tomatoes. Drizzle the olive oil evenly across the entire dish, ensuring the feta is well coated.
  4. Season the dish with dried oregano, red pepper flakes, and black pepper.
  5. Bake for 30 minutes until the feta is softened and slightly golden on top and the tomatoes are blistered and bursting.
  6. Remove from the oven and let cool for 5 minutes. Note: This prevents the oil from splashing when you stir.
  7. Using a fork, mash the softened feta into the roasted tomatoes and garlic.
  8. Stir vigorously until a smooth, creamy sauce forms and the cheese fully incorporates.
