Ingredients:

  • 2 cups (300g) cherry tomatoes, whole
  • 2 tbsp (30ml) extra virgin olive oil
  • 3 cloves (15g) garlic, smashed
  • ½ tsp (3g) sea salt
  • ¼ tsp (1g) cracked black pepper
  • ½ tsp (1g) dried oregano
  • 4 large eggs
  • 2 oz (60g) feta cheese, crumbled
  • 1 tbsp (5g) fresh parsley, chopped

Instructions:

  1. Pre-heat your oven to 400°F (200°C).
  2. Toss the whole cherry tomatoes, smashed garlic, olive oil, salt, pepper, and oregano directly in an 8-inch oven-safe skillet.
  3. Roast for 15–20 minutes until the skins wrinkle and a few tomatoes pop, creating a thick, jammy consistency.
  4. Remove the skillet from the oven and use a spoon to create four small wells or pockets in the blistered tomato mixture.
  5. Carefully crack one egg into each pocket.
  6. Sprinkle the crumbled feta cheese evenly around the eggs.
  7. Return the skillet to the oven and bake for 8–12 minutes until the egg whites are opaque and set, but the yolks still have a slight jiggle.
  8. Garnish with fresh chopped parsley and optional red pepper flakes before serving.
