Ingredients:
- 2 cups (300g) cherry tomatoes, whole
- 2 tbsp (30ml) extra virgin olive oil
- 3 cloves (15g) garlic, smashed
- ½ tsp (3g) sea salt
- ¼ tsp (1g) cracked black pepper
- ½ tsp (1g) dried oregano
- 4 large eggs
- 2 oz (60g) feta cheese, crumbled
- 1 tbsp (5g) fresh parsley, chopped
Instructions:
- Pre-heat your oven to 400°F (200°C).
- Toss the whole cherry tomatoes, smashed garlic, olive oil, salt, pepper, and oregano directly in an 8-inch oven-safe skillet.
- Roast for 15–20 minutes until the skins wrinkle and a few tomatoes pop, creating a thick, jammy consistency.
- Remove the skillet from the oven and use a spoon to create four small wells or pockets in the blistered tomato mixture.
- Carefully crack one egg into each pocket.
- Sprinkle the crumbled feta cheese evenly around the eggs.
- Return the skillet to the oven and bake for 8–12 minutes until the egg whites are opaque and set, but the yolks still have a slight jiggle.
- Garnish with fresh chopped parsley and optional red pepper flakes before serving.
