Ingredients:

  • 1 cup (180g) whole wheat berries, rinsed
  • 3 cups (710ml) water
  • 1/2 tsp (3g) sea salt
  • 2 medium (300g) Honeycrisp or Fuji apples, diced
  • 2 stalks (80g) celery, thinly sliced
  • 1/2 cup (80g) dried cranberries
  • 1/4 cup (30g) sliced almonds, toasted
  • 1/4 cup (15g) fresh parsley, chopped
  • 1/3 cup (80ml) extra virgin olive oil
  • 3 tbsp (45ml) apple cider vinegar
  • 1 tbsp (15ml) maple syrup
  • 1 tsp (5g) Dijon mustard
  • 1/4 tsp (1.5g) salt
  • 1/4 tsp (1g) black pepper

Instructions:

  1. Combine wheat berries, water, and salt in a pot. Bring to a boil, then reduce heat to low and cover. Simmer for 45–60 minutes until the berries are tender but still retain a distinct, popping chew. Drain any excess water through a fine-mesh strainer and let them cool slightly.
  2. Dice apples and celery into uniform, small pieces. In a large mixing bowl, combine the diced apples, celery, dried cranberries, and toasted almonds.
  3. In a small jar or bowl, whisk together the apple cider vinegar, maple syrup, and Dijon mustard. Slowly stream in the olive oil while whisking vigorously until the dressing is glossy and thickened. Season with salt and pepper.
  4. Pour the cooled wheat berries into the bowl with the fresh produce. Drizzle the vinaigrette over the top and toss gently until every grain is glistening. Fold in the fresh parsley last.
