Ingredients:

  • 6 oz mixed baby greens or arugula
  • 1 large Granny Smith apple, thinly sliced
  • 4 oz blue cheese, crumbled
  • 1/2 cup walnuts, toasted
  • 1/3 cup extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp maple syrup
  • 1/4 tsp fine sea salt
  • 1/4 tsp freshly cracked black pepper

Instructions:

  1. Wash the mixed greens and use a salad spinner until completely dry. Slice the apple into thin matchsticks or crescents.
  2. Combine olive oil, apple cider vinegar, Dijon mustard, maple syrup, sea salt, and black pepper into a mason jar. Tighten the lid and shake vigorously for 30 seconds until creamy and opaque.
  3. Place the greens in a large bowl and drizzle with half the dressing; toss gently.
  4. Add the apple slices and walnuts, then drizzle the remaining dressing.
  5. Gently fold in the blue cheese crumbles last to prevent them from smearing.
