Ingredients:

  • 2 medium zucchinis, sliced into spears (approx. 1 lb / 450g)
  • 1 tbsp extra-virgin olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 2 tbsp grated Parmesan cheese
  • 1 tsp fresh parsley, chopped

Instructions:

  1. Wash and dry the zucchini thoroughly. Slice each zucchini lengthwise into quarters, then slice those quarters into sticks roughly 3-4 inches long.
  2. In a large bowl, toss the zucchini spears with olive oil, garlic powder, salt, and pepper until every piece is thinly coated.
  3. Preheat the air fryer to 400°F (200°C). Arrange the zucchini in a single layer in the basket to ensure proper airflow.
  4. Cook for 10 minutes, shaking the basket gently at the 5-minute mark, until the zucchini is mahogany-colored and edges are slightly charred.
  5. Sprinkle grated Parmesan over the zucchini and air fry for an additional 2 minutes until the cheese is melted and bubbling.
  6. Garnish with chopped fresh parsley and serve immediately.
