Ingredients:
- 2 medium zucchinis, sliced into spears (approx. 1 lb / 450g)
- 1 tbsp extra-virgin olive oil
- 1/2 tsp garlic powder
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 2 tbsp grated Parmesan cheese
- 1 tsp fresh parsley, chopped
Instructions:
- Wash and dry the zucchini thoroughly. Slice each zucchini lengthwise into quarters, then slice those quarters into sticks roughly 3-4 inches long.
- In a large bowl, toss the zucchini spears with olive oil, garlic powder, salt, and pepper until every piece is thinly coated.
- Preheat the air fryer to 400°F (200°C). Arrange the zucchini in a single layer in the basket to ensure proper airflow.
- Cook for 10 minutes, shaking the basket gently at the 5-minute mark, until the zucchini is mahogany-colored and edges are slightly charred.
- Sprinkle grated Parmesan over the zucchini and air fry for an additional 2 minutes until the cheese is melted and bubbling.
- Garnish with chopped fresh parsley and serve immediately.
