Ingredients:
- 1.5 lb pork tenderloin
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 2 tbsp honey
- 1 tbsp Dijon mustard
- 1 tsp apple cider vinegar
Instructions:
- Pat the pork tenderloin completely dry with paper towels to ensure a mahogany crust forms.
- Rub olive oil evenly across the entire surface of the meat.
- Combine salt, pepper, garlic powder, and smoked paprika; coat the pork generously, pressing the spices into the meat.
- Preheat the air fryer to 400°F (205°C) for 5 minutes.
- Place the tenderloin in the basket and cook for 12-15 minutes, flipping halfway through using tongs.
- Whisk together honey, Dijon mustard, and apple cider vinegar. Brush the glaze liberally over the pork during the last 3-5 minutes of cooking.
- Use a meat thermometer to check the thickest part of the meat; remove immediately when it hits 140°F (60°C).
- Transfer the meat to a cutting board, tent loosely with foil, and let rest for 10 minutes to allow juices to redistribute.
