Ingredients:
- 1 medium acorn squash (approx. 2 lbs / 900g)
- 2 tbsp olive oil
- 1 tbsp brown sugar
- 1/2 tsp kosher salt
- 1/4 tsp freshly ground black pepper
- 1/4 tsp garlic powder
Instructions:
- Carefully slice the acorn squash in half lengthwise and scoop out the seeds. For cubes, peel the skin and cut into 1-inch pieces. For halves, leave the skin on and slice into 1/2-inch thick crescent moons.
- In a large bowl, toss the squash pieces with olive oil until glistening.
- Sprinkle the brown sugar, salt, pepper, and garlic powder over the squash. Toss again until the seasoning forms a light paste that clings to the squash.
- Place the squash in the air fryer basket in a single layer.
- Air fry at 400°F (200°C) for 12–15 minutes, shaking the basket or flipping pieces halfway through, until edges are deeply browned and flesh is tender.
